So we would have a different value / email for each institution that enables this for it's clients?

If so, what property should I be looking at, we're developing the extension and that info is needed to proceed.

This would typically be a configuration of the extension that would be set at time of deployment. Since this information would be singular per institution, and not change frequently, it can be easily set at deployment time.
